Brier Hill Pizza

(Very Low Sodium)

This recipe makes 2 large Pizza's.  The crust is tender on the inside and crispy on the outside and resembles pies made in Naples, Italy.  This Neapolitan pizza will knock your socks off.  It's a perfect low sodium pizza.  If you don't live in the Youngstown area, you may not even know what a Brier Hill Pizza is.  If you don't know, you are in for a sweet surprise.  This pizza is a little bit of heaven on earth.  Wikipedia describes it best... "Brier Hill is a  neighborhood in Youngstown, Ohio that was once viewed as the city's "Little Italy" district.  The neighborhood, which was the city's first Italian settlement, stretches along the western edge of Youngstown's lower north side and encircles St. Anthony's Church, an Italian American Roman Catholic Parish.  Each year, at the end of August, the Brier Hill Fest attracts thousands of visitors from Northeastern Ohio and Western Pennsylvania."  It's better than any pizza you can buy in a pizza shop...

 

Ingredients:

Recipe for Pizza Dough

12 tsp. Grated Parmesan Cheese (kraft)


Instructions:


Once the dough is ready, divide into 2 equal parts.  Each should weight about 2 lbs.  Generously grease the bottom of a 16 inch deep dish pizza pan.  Spread dough in the pan until it fills the bottom of the pizza pan.  Roll edges over to make the crust.  Use  a fork to stab the dough evenly across the entire pizza crust. 


Add one cup of the pizza sauce evenly across the pizza.  Staying away from the crust.  Add green peppers and then sprinkle        4 TBSP. of grated parmesan cheese across the top of the sauce and peppers.  Bake your pizza in a preheated 500 degree oven for at least 10 min's or until golden brown.  If you have a pizza stone use it... put it in the oven when it is preheating.  When the Pizza is almost done, remove it from the pan and place it directly on the stone to crisp up the bottom.  


Remove pizza from the oven when golden brown.  Add another 4 Tbsp. of grated parmesan cheese to the top of the pizza once it comes out of the oven.
