This is a very moist and tender bread with a great flavor. It's a family favorite. The goal is not to eat the entire loaf in one sitting.
1/2 cup, Unsalted Butter
1 cup White Sugar
1 tsp Vanilla extract
2 Egg
1 1/2 cup, All Purpose Flour
2 Teaspoon (3g), Baking Soda Substitute
1/2 cup Sour Cream
2 medium Banana
Use the Kitchen Aid to beat the bananas. I beat mine until they are almost smooth with very small banana chunks.
Add all other ingredients in the following order:
Beat sugar and melted butter on high until well mixed
Add eggs and vanilla and continue to beat well.
Then combine flour, baking soda substitute and incorporate into butter mixture. Beat until smooth. Set aside.
Fold the sour cream into the banana's.
Now gently fold the sour cream/banana mixture into the other ingredients.
Pour mixture into greased loaf pans and bake at 350 degrees for about 60 minutes or until golden brown. Cool in the pan for about 10 minutes then transfer to a wire rack to cool.
Makes 1 loaf.
